Scan bran challenge day 4

I wasn’t really looking forward to scan branning it up on a Saturday, so I decided to make things as simple as I could on myself. I made a batch of basic scan bran cake mix, cooked it in a silicone muffin tray and munched on the little cakes throughout the day whenever I was feeling a bit peckish.

The recipe for these can be easily found online – and all the instructions I’ve read say to simply soak the scan bran biscuits in boiling water. This did not work for me so, as normal, I suggest turning the biscuits into powder with a food processor or coffee grinder, and then adding boiling water to soften it up.

In addition, the standard recipe says to cook the cakes in the microwave. Again, this didn’t work for me in the past. So I bake mine at 200 degrees C for about 20 minutes.

Ingredients

  • 5 scan bran biscuits
  • 2 eggs
  • 1 Muller light any flavour (I prefer toffee or vanilla)
  • 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 5 tbsp sweetener (or to taste)

Instructions

  1. Crush scan bran into a fine powder – this works best with a food processor or coffee grinder. Add boiling water to soften it and allow the mixture to soak for about ten minutes.
  2. In a separate bowl, beat the eggs together, then mix thoroughly with remaining ingredients. When the scan bran has finished soaking, add it to the egg mixture and mix well.
  3. Pour mixture into a baking tray or muffin tin and bake in preheated oven at 200 degrees for about 20 minutes.

      Glad to help! The silicone trays should also be microwave safe, if you want to cook your scan bran cake the ‘normal’ way in the microwave.

    I know it’s a while since you posted this, so hope you can answer me!
    How much boiling water so you add at the beginning? I’m thinking just enough to cover/moisten all the scan bran?

      Hi Jayne, yes. It’s just enough to moisten the scan bran and make it less like sawdust. 🙂
